Implicaciones sobre la salud humana del consumo de leche de vaca

Resumen

El objetivo del artículo es realizar una revisión narrativa sobre las implicaciones en la salud gastrointestinal del consumo de la leche de vaca y derivados lácteos, por lo cual se realizó una búsqueda avanzada y posterior revisión de la literatura en la base de datos de PubMed. Se encontró que existen implicaciones favorables para la salud humana debido a las propiedades nutricionales y biológicas, además de algunas enfermedades crónicas y síntomas gastrointestinales que se han asociado a los componentes de la leche, los cuales pueden depender de la variabilidad genética del ganado. Se ha evidenciado que la leche libre de beta-caseína A1, que contiene beta-caseína A2, es una posible alternativa para pacientes con intolerancia a este alimento, inclusive siendo superior a la leche deslactosada, por lo tanto, es un tema que el personal de salud debe conocer para realizar indicaciones precisas en cuanto a su consumo.
