Tostado y harina de la hormiga santandereana “atta laevigata”
Resumen
La hormigaAttalaevigata, habita en los departamentos de Santander y Casanare
de Colombia donde son utilizadas como alimento por los habitantes, atribuyéndoles
propiedades afrodisiacas. Se evaluaron los métodos actuales de recolección,
procesados y materiales empleados en la elaboración de hormiga tostada, y de
acuerdo a las deficiencias encontradas se propusieron métodos eficaces y nuevos
procesos para un mejor aprovechamiento de este recurso. La tecnología propuesta
para la obtención de la hormiga tostada y elaboración de la harina aumentaron
los rendimientos, la concentración de proteínas y el tiempo de conservación.
