Desempeño de una película de maíz azul en el envasado de un queso de humedad intermedia

Resumen

La PCT/MX2009/000092, describe un método para obtener películas a partir de harina de cereales mediante método de "casting" y empleocomo almohadillas antimicrobianas yenvases termosellables para alimentos secos. Debido a su sensibilidad al agua y baja resistencia mecánica para contener alimentos de humedad intermedia; se reformuló la matriz biopolimérica para mejorar ambos parámetros.La película derivada de la reformulación fue caracterizada mecánicamente (ASTM D1708), se midió el "swelling" y se observó mediante microscopía electrónica de barrido.El desempeño de la película fue evaluado envasando unalimento perecedero: un quesosemimadurado,sometiéndolo a almacenamiento refrigerado durante 2 meses. Control: se emplearon queso del mismo lote envasado al vacío en película alta barrera. Durante los estudios de estabilidad en anaquel se evaluaron parámetros críticos microbiológicos como fisicoquímicos para el alimento envasado.Se observó que si bien las películas activas controlaron la carga microbiana, la integridad del envase se vio alterada debido a absorción de agua por contacto con el alimento, observándose ruptura de la estructura e integridad del biopolímeroy en consecuencia, exposición del producto y término de su vida útil.
